Buffet Catering in Medellín

Medellin Elite Catering has run buffet lines in Medellín since 2019, on finca terraces, in hotel ballrooms, in office cafeterias and in the salones sociales of residential towers. A buffet is our most booked format because it feeds a crowd quickly, offers choice and needs fewer servers than plated service.

We cook every dish in our own production kitchen, then bring the food, the chafing dishes, the tableware and the team that runs the line. Hosts include couples planning a relaxed wedding, companies hosting a year-end party and families gathering for a christening or a milestone birthday.

Our largest buffet so far fed 900 guests at a company year-end party, and most weeks we set up several lines for 40 to 200 people. That repetition shows in the details: trays swapped before they run low, labels on every dish and a line that never stalls.

Our Buffet Catering Service

Our buffet service delivers hot and cold dishes on a staffed line at your venue, with every item cooked fresh that day. Each staffed quote includes the menu, cooks, servers, chafing dishes, ceramic plates, flatware, glassware, setup and full cleanup.

The team arrives 2 to 3 hours before the first plate, assembles the line, lights the chafers and brings the trays up to temperature. Standard service covers 5 hours on site, enough for a welcome snack, the main buffet, dessert and coffee.

Tables, chairs, linens and tents are rentals we arrange through partner suppliers and itemize separately in your quote. If your venue already has furniture, we simply bring the food and the line.

Staffed buffets start at 15 guests. For a smaller group, or a host who would rather lay out the trays alone, our catering delivery service brings the same hot dishes in insulated carriers with no staff.

Self-Serve or Attended Buffet?

A self-serve buffet lets guests take what they like, while an attended buffet has servers behind the line placing each portion. Attended lines need slightly more staff but control portions, move faster and keep the trays looking full until the last guest.

For weddings and anything above 100 guests we nearly always suggest an attended line. A server carving lomo or posta cartagenera to order also adds a little theater that guests remember.

Building a Buffet Menu

A balanced buffet has two proteins, two starches, two salads and a set of sauces, plus one vegetarian main that satisfies a hungry guest on its own. That structure suits a mixed group of locals, visitors and children without overloading the line.

For a dinner buffet we plan 180 to 220 g of cooked protein per guest across all proteins, about 150 g of starches and 100 g of salad. Lunch portions run about 20% smaller, and we adjust upward for sports teams and film crews.

CoursePopular choices
ProteinsPosta cartagenera, pork loin from the barrel smoker, chicken in mushroom sauce, grilled trout
StarchesCoconut rice, roasted criolla potatoes, patacones, pasta with pesto
SaladsAvocado and tomato, mixed greens with mango, quinoa with roasted vegetables
SaucesHogao, fresh ají, chimichurri, garlic cream
Vegetarian mainStuffed eggplant, vegetable lasagna, lentil and coconut curry

Colombian guests expect rice on the table, while many international guests reach first for salads. Planning both generously avoids the common mistake of a buffet that runs out of the one dish everyone wanted.

Dietary needs sit inside the same line rather than on a side table. Our vegetarian catering and gluten-free catering menus show how we label and separate those dishes.

Buffet Layout and Line Length

Plan about 2 m of buffet table for every 50 guests, with plates at the start and cutlery and napkins at the end so guests are not juggling them along the way. Above 150 guests we set the line double-sided, which doubles the flow without doubling the table length.

Place the line against a wall only when the party is small. In a ballroom or under a finca tent we put it in open floor space with 1.5 m of clearance on each side, so the queue never spills into the dance floor or the dining tables.

Order matters too: salads and cold dishes first, then starches, then proteins at the end with a server. Guests who meet the meat last take a fair portion, which keeps a 200-guest buffet from running short before the final tables are called.

Keeping a Buffet Safe

Hot buffet food stays above 60 °C in fueled chafing dishes and cold food below 5 °C on ice beds or chilled wells, checked with a probe thermometer every 30 minutes. Our kitchen and staff work under Colombia's food-handling rules, Resolution 2674 of 2013, and every cook and server holds a current food-handler certificate.

We never top up a half-empty tray with fresh food, which mixes old and new. Instead the server swaps the whole pan for a full one brought from the hot box, and the old pan goes back to the kitchen area.

Food left on an open buffet for two hours comes off the line, even if it still looks good. Each tray carries a label listing its allergens, which matters on terraces where the afternoon sun can warm a cold salad faster than guests expect.

Where We Set Up Buffets

We run buffets throughout Medellín and the Aburrá Valley, from Bello in the north to Caldas in the south. Popular settings include rooftop terraces for catering in El Poblado and hillside fincas for catering in Envigado.

Fincas in Llanogrande, Rionegro or Santa Fe de Antioquia are staffed events only, planned case by case. For those venues we bring extra hot boxes because the drive runs 1 to 2.5 hours.

Questions and answers

Buffet FAQs

How long does a buffet stay open?

The main buffet usually stays open for 90 minutes, which gives every guest time for a first plate and a second visit. After that we clear the hot trays, because food-safety practice limits how long cooked food sits out, and move to dessert and coffee. A longer service window can be arranged for open-house events where guests arrive in waves.

Do you take leftovers away?

We pack leftovers for the host when food safety allows, and remove the rest. Food that stayed in the kitchen or in a closed Cambro carrier at the correct temperature can be boxed, labeled and chilled for you. Anything that sat on the open line for close to two hours is discarded, because reheating it again is not safe.
