Taco Bar Catering in Medellín

Medellin Elite Catering sets up taco bars for birthday parties, pool afternoons, office Fridays and wedding after-parties across Medellín. Guests build their own tacos from warm tortillas, slow-cooked meats and a row of salsas and toppings, which makes it one of the easiest menus to serve a mixed crowd.

We run taco bars for 15 to 300 guests, either attended by our cooks or set out for guests to serve themselves. Since 2019 we have learned that a taco bar succeeds or fails on two things: tortillas that stay warm and soft, and a line that keeps moving.

Everything is cooked in our own Medellín kitchen and arrives ready to serve, with hot proteins held above 60 °C and cold toppings kept below 5 °C.

Our Taco Bar Catering

A taco bar is a buffet station where guests fill their own tortillas from a choice of proteins, salsas and toppings. It is informal, it handles dietary needs without a separate menu, and it gets people talking at the table.

It works best for casual events where guests stand, mingle or eat in waves: pool parties, birthdays, sports nights, housewarmings and Friday office lunches. For a seated meal with enchiladas, mole and courses, our Mexican catering menu is the better choice.

For a team lunch in an office, a self-serve taco bar is a lively alternative to the boxed meals of our corporate lunch catering, and it sets up in about 30 minutes on a sideboard or meeting table. At a wedding, it turns up around midnight as the late-night snack, when nobody wants another plated course.

Proteins, Tortillas and Toppings

Every taco bar has three parts: proteins, tortillas and the toppings and salsas that finish each taco. You choose 2, 3 or 4 proteins, and every package includes corn and flour tortillas, every topping, three salsas and chips with guacamole.

Proteins

Al pastor is pork marinated in achiote, guajillo and pineapple juice, roasted in our combi oven and seared with pineapple before it leaves the kitchen. Carnitas are pork shoulder cooked slowly in its own fat with orange until crisp at the edges, and chicken tinga is shredded chicken in a smoky tomato and chipotle sauce.

For a vegetarian protein we grill zucchini, peppers, red onion and mushrooms with lime and cumin, or cook spiced black beans. Beef birria and carne asada are available as a fourth protein, and a fish taco of beer-battered corvina with cabbage slaw is popular at pool parties.

Tortillas

We serve 12 cm corn tortillas, street-taco size, pressed the same morning, plus 20 cm flour tortillas for guests who prefer them softer. Corn tortillas go out doubled, two per taco the way taquerías serve them, so they hold juicy fillings without splitting.

Tortillas are kept in cloth-lined insulated warmers and refreshed on a hot plate every 15 minutes during service. A cold, stiff tortilla is the most common taco bar failure, and it is the one our team watches closest.

Toppings and Salsas

The toppings are chopped white onion and cilantro, pickled red onion, shredded cabbage, sliced radish, crumbled campesino cheese, crema, guacamole and lime wedges. Salsas run from a mild pico de gallo through a medium salsa roja to a hot habanero, each labeled with its heat level.

Plan on 2 tablespoons of salsa and 30 g of guacamole per guest. For crowds of more than 100, we set the toppings on both sides of the table so two lines can move at once. Aguas frescas, a margarita bar and churros with chocolate sauce can be added to any taco bar.

Attended Station or Self-Serve

An attended station has a cook who warms tortillas, fills tacos and keeps the trays full, while a self-serve bar is set out and guests do the rest. Attended service needs more staff but moves the line faster and keeps portions even.

A self-serve bar arrives with chafing dishes, gel fuel, tortilla warmers and compostable plates, and holds well for about 2 hours. An attended station is part of a staffed event, so it includes setup, cleanup and the team's standard 5 hours on site.

In residential towers, the building administration usually has to approve a station with burners in the salón social under Ley 675 of 2001. Our catering in Itagüí team sends the equipment list ahead so the request goes through without delays.

Questions and answers

Taco Bar FAQs

How many tacos per guest?

Plan on 3 to 4 tacos per adult when the taco bar is the main meal, and 2 when it is a late-night snack or one station among several. Children usually eat 2. That works out to about 120 to 150 g of cooked protein per adult, and we prepare 10% extra tortillas because some always tear or get dropped.

Can the taco bar be fully vegan?

Yes, every part of the taco bar can be vegan. Corn tortillas, salsas, guacamole, pickled onions and black beans contain no animal products, and we replace the meats with grilled vegetables and oyster mushroom al pastor. Our vegan catering menus use separate pans and tongs, and we leave out the crema and cheese or offer a cashew crema instead.
