Wing Catering in Medellín

Medellin Elite Catering cooks chicken wings by the tray for watch parties, office Fridays, birthdays and casual events in Medellín. Our wings are fresh Colombian chicken, dry-brined overnight, roasted until the skin renders and tossed in sauces we make ourselves, from classic buffalo to a passion fruit and ají glaze.

Wings are what expats and visiting groups ask for when the big game is on, whether it is the Super Bowl in February, an NBA final or the clásico between Atlético Nacional and Independiente Medellín. Local hosts order them too, because alitas are as popular in Medellín as anywhere in the United States.

We have catered parties in Medellín since 2019, and wings are among the trickiest foods to deliver well. Crispy skin turns soft in a closed box within minutes, so the way we pack and finish them matters as much as the recipe.

Our Wing Catering

We offer wings as drop-off trays delivered hot, as part of a staffed party buffet, or from a fryer station where wings are finished and sauced in front of guests. Trays suit apartment watch parties and office afternoons, while the fryer station suits bigger birthdays, fincas and company events where the food is part of the fun.

Wings are rarely served alone, so most hosts add sides, a vegetarian option and something sweet. For a game day in a parking area or at a finca, our tailgate catering setup adds coolers, serving tables and cleanup, so the host can watch the match too.

Wing Flavors

We offer ten flavors, from sweet and mild to properly hot. For groups under 30 we suggest three flavors, and for larger groups four or five, with at least one mild sauce for guests who avoid chili.

Our buffalo sauce is built from a cayenne hot sauce, butter and vinegar, adjusted with Colombian ají for brightness. The jerk wings share their marinade with our Jamaican catering menu, where the same flavors appear on grilled chicken quarters and pork.

How We Cook and Pack Wings

Our wings start as fresh Antioquian chicken, never frozen, cut into drumettes and flats and dried overnight with salt and a little baking powder. That dry brine pulls moisture from the skin, so the wings turn crisp in the combi oven at 220 °C without needing to be deep-fried for long.

Every wing reaches an internal temperature of at least 74 °C, checked with a probe thermometer on each batch. For staffed events we finish them in a countertop fryer at 190 °C for 2 minutes at the venue, then toss them in sauce in a steel bowl right before they go on the tray.

Drop-off wings are the hard part, because steam trapped in a sealed box softens the skin in 10 minutes. We pack them in vented kraft boxes inside insulated carriers, send the sauces in separate containers for the crispiest results, and ask hosts to toss them just before serving; if you prefer, we sauce them in the kitchen and accept a slightly softer skin.

Sides and Dips

Every wing order comes with celery and carrot sticks and one dip per 10 wings. Classic choices are ranch and blue cheese dressing, both made in our kitchen, and we add a cilantro and lime crema for guests who want something lighter.

For heartier sides, guests in Medellín love papas criollas, the small yellow Andean potatoes that crisp beautifully with salt and lime, and fried yuca with ají. We also make French fries, coleslaw, corn on the cob and baked mac and cheese, which pairs well with wings at children's parties and is a full menu of its own on our mac and cheese catering page.

Planning a Watch Party

Wings for a watch party should arrive 30 minutes before kickoff, so guests eat during the first quarter or half. For a long game we split the order into two deliveries or bring a fryer, because a second round at halftime is hotter and crisper than wings that have waited two hours.

Matches at the Atanasio Girardot stadium snarl traffic around Estadio and Laureles, so for catering in Laureles on match days we leave the kitchen 30 minutes earlier. Building rules in residential towers often limit noise after 10:00 p.m., under Ley 1801 of 2019, so we plan cleanup before then when your party is in a salón social.

Drop-off wings come in trays of 50 pieces with 2 flavors or 100 pieces with up to 4 flavors, each with celery and dips, and boneless and cauliflower wings come in trays of 50. A watch party of 20 fans eating 12 wings each needs about 240 wings, which is two 100-wing trays and one 50-wing tray. Add a tray of papas criollas or fries, which serves about 20 guests, and the table is set for the whole match.

Questions and answers

Wing FAQs

How many wings per person?

Plan on 6 wing pieces per person as an appetizer, 10 to 12 when wings are the main food, and 12 to 15 for a game that runs three hours or more. A piece is one drumette or one flat, and 1 kg of raw wings gives about 10 to 12 pieces. If half your guests are light eaters, add a side such as fries or mac and cheese and keep to 8 pieces each.

Do you offer boneless or cauliflower wings?

Yes, we make both. Boneless wings are pieces of chicken breast in a seasoned crumb, fried and tossed in any of our sauces, and they are easier for children and office events. Cauliflower wings are battered florets roasted until crisp, which makes them vegetarian, and vegan when tossed in buffalo, BBQ or the maracuyá glaze.
