We can build the menu around a loved one's favorite dishes, cooked from a family recipe or from a description. It is the request we receive most often for these gatherings, and it is the one that matters most to the family.
The process starts with a conversation: what the dish was, who made it, what it smelled like and what was served alongside. Sometimes it is a mother's sancocho with a particular cut of hen, sometimes a father's barbecue ribs from his years in Texas, and sometimes a grandmother's natilla and buñuelos from every December.
Our head chef cooks a test batch, the family tastes it, and we adjust the seasoning, texture and portion until it is right. On the day, we can place a small card beside the dish with its name and a line about the person, in Spanish, English or both.
